Auditorias com qualidade no âmbito do sistema de higiene e segurança alimentar (HACCP]

Abstract

O objetivo deste trabalho foi identificar o grau de aceitabilidade e de satisfação com o serviço HACCP por parte dos clientes e de verificar a qualidade de implementação desse sistema, enquadrado no âmbito do sistema de gestão da segurança alimentar, segundo os requisitos da norma NP EN ISO 22000:2005, na empresa Interprev em Évora. Para tal, foi aplicada uma check-list e um inquérito por questionário a 5 restaurantes escolhidos aleatoriamente na cidade de Évora. Os resultados obtidos revelaram que os clientes estão satisfeitos alcançando a classificação de “Muito Bom”. No que respeita a qualidade de implementação, verificaram-se falhas em pontos fulcrais, visto continuarem a existir anomalias a nível estrutural e funcional nos estabelecimentos; ### Abstract: Quality audits in the sector of Food safety control system (HACCP) The system of Hazard Analysis and Critical Control Points (HACCP) is a preventive system which searches the production of innocuous food. This study’s goal was to identify the level of acceptance and satisfaction with the service by customers and to verify the quality of HACCP implementation, framed under the system of food safety management, according to the requirements of standard NP EN ISO 22000:2005, at the company Interprev in Évora. Initially a literature review was made about the issues HACCP audits and quality. Then a checklist and a questionnaire were applied to 5 restaurants randomly selected. The results revealed that customers are satisfied, reaching "Very Good" on the rank. Regarding the quality of implementation , failures in key points were verified, once it continues to occur structural and functional abnormalities at the establishments.
